Warm Yam & Corn Salad with Golden Berry Dressing

Beat the winter chill with this ‘Warm Yam & Corn Salad w/Golden Berry Dressing’ superfoods recipe created by ‘Good For You Gourmet’ personal chef and caterer, Chef Laura Moore. Makes 4 side salad servings, or 2 main meal size servings.

Precook:

  • 1.25 pound Yams, peel & cut into inch cubes; bring to a boil, lower heat to simmer for 18-20 minutes. Drain & allow to cool somewhat before tossing with dressing.

Prepare Veggies:

  • 2/3 cup Corn Kernels, thaw & rinse;
  • 1/2 cup Celery, diced;
  • 1/4 cup Cilantro OR Parsley, chopped
  • 1 cup Pineapple chunks
  • 1 cup Sugar Snap Peas
  • 1/3 cup Cilantro, chopped
  • 3 Green Onions, chopped.

Golden Berry Dressing:

  • 1/3 cup Golden Berries into a small sauce pan: add 1 cup Water OR Vegetable Broth, and simmer for 10 minutes.

Macerate with hand held mixer, or in blender:

  • 1/4 cup Olive Oil,
  • 1 Tbs. Lemon OR Lime Juice;
  • 1 Tbs. Agave Syrup;
  • 1 tsp EACH Coriander & Sea Salt,
  • 1/2 tsp White Pepper,
  • 1/4 tsp Paprika
  • 1/4 tsp Lime Zest.
  • 3 Green Onions, chopped.

Season to taste, toss with warm yams & raw veggies, then serve garnished with 1-2 Tbs Walnuts per serving.

Yams: low glycemic, high in Vit C & B, potassium, and protein ‘dioscorin’, mimic progesterone
Walnuts: rich w/phenols, vitamin E, cardiovascular, antioxidant and anti-inflammatory benefits
Golden Berry: S. American origin, high in Vit and protein, loaded with antioxidants, mild diuretic
