Have you picked clean the carcass of a lovely roasted, local free-range chicken, and wonder now how to make some tasty bone broth? Here is a convenient recipe for simple chicken bone broth, for those times when you have the leftover bones of one chicken to work with. Since the bones have been roasted it in the oven already, they will not require any more cooking before adding to the broth pot: however, baking in 350 degree oven for another 30-45 minutes will add flavor and color to your broth.
Transfer the bones of one roasted chicken into a medium stock pot, and cover with water, plus one inch. Bring to a low simmer for 2 hours, adding water to keep level up. Half hour before done, add 2 Garlic Cloves, crushed; and 1 Bay Leaf, then return to simmer for 15 minutes. Remove from heat and add bouquet garni of Rosemary and Oregano Sprigs, then let stand to cool for 15 minutes. Sieve out bones and herbs, and discard: reserve broth for sipping, use in soup recipes, or reduce for use in sauces. Season with 1/2-1 tsp sea salt and 1/4 – 1/2 tsp pepper just before serving.
